  • Tuscan Violet Artichok (Cynara scolymus): this artichoke from the Corni Valley is one of the best crops, a typical product of the coastal area, particularly from the Livorno coast that grows in the Cornia Valley and Venturina.

    It is particularly used in the area to be preserved in oil.

    The artichoke does not do like extreme weather, intense cold can damage the plant, which being perennial must be planted in full sun, the plants live about 10 years although after 5 years it is advisable to move it. After pruning, as described below, the plants can propagate by expanding the artichokes from year to year. The artichoke becomes dormant when the temperatures are too high or the climate gets drought, therefore it is necessary to increase the water availability if you want to “awaken” the plant to anticipate the harvest.

    When the plant is not in the dormancy phase it is advisable to water it regularly.
