  • Zolfino Bean (Phaseolus vulgaris): This is an important heirloom important variety from Tuscany. Until recently, it was only available in the Loro Ciuffenna area (Ar). Zolfino bean is a rustic one that adapts well to poor soils. However, in order to cultivate it, you need a soil that drains very well, the plant cannot bear the slightest water stagnation. The seed is round and small (5-8 mm), pale yellow, like Sulphur, hence its name. Its main quality is its very thin peel, that makes it particularly digestible. The Zolfino is also called the “100 bean”, because it is recommended to sow it on the hundredth day of the year. Particularly suitable for mountain crops and poorly worked soils. It is extremely good in soups with black cabbage ( another Italian excellence).
