  • Canestrino Tomato from Lucca (Lycopersicon lycopersicum): heirloom and important Tuscan variety, registered in the biodiversity register of this region. Its name is linked to its “basket” shape, but it is also recognized for the green color of the upper part of the berry, which persists even when fully ripe, and for the presence of small cracks just below the attachment of the petiole: aesthetic imperfections that can be considered as a kind of trademark.

    The pulp is soft, firm, not very watery, and with very few seeds; the peel is thin.

    The size is very variable: the berries weight about 150-200 gm but can reach 300 gm.

    The taste is sweet, due to the high sugar content and low acidity.

    When ripe, it is excellent for salads, thanks to its intense aroma, strong taste and consistency of its pulp, but it is also suitable for the preparation of fresh sauces and preserves, given the scarce presence of water.
