Green Cauliflower from Macerata (Brassica oleracea)

Green Cauliflower from Macerata (Brassica oleracea):  from Marche, the traditional green cauliflower, typical from this Italian region. It is a late variety, if cultivated along with others varieties,  they will give a healthy, diverse collection.

An escalated sowing will provide longer, contemporary harvests.  The whites first, (whether it is Toscano or Snowball), then the Purple Sicilian, then the Green from Macerata. Lots of colours and health right in the garden.

The green of this cauliflower is due to its large  content of chlorophyll, which, like anthocyanins, is an antioxidant.
