Chicory from Soncino or Scorzamara (Cichorium intybus)
Chicory from Soncino or Scorzamara (Cichorium intybus): this variety that comes from Sunsì, in Lombardy (Northern Italy) is increasingly disappearing. Up until the 1960’s it was widely present in typical preparations such as the famous “risotto alle radici” (root risotto). At some point, the demand for it dropped which caused farmers to abandon its cultivation.
However, in the last few years the renewed interest in heirloom ecotypes and biodiversity has led to its return to gardens.
Its has severall nutritional properties, it contains antioxidants, is high in fiber, and very low in calories. Its flavour is quite distinctive, earthy and intense.
To be sown in the summer for winter harvest. Very rustic, it does not require special attention, however, as with all roots, a loose and deeply worked soil is required.
