Azuki Bean (Vigna angularis)
Azuki Bean (Vigna Angularis): this is an ancient variety from Korea and China, there are records of its existance from around 1000 BC; it is also called Adzuki. This small traditional Japanese bean is used in many recipes; specially in Dorayaki, a very popular dessert in the far East, that's similar to crepes.
The beans are reduced to a puree and added sugar to make Anko, that is the base for many sweet dishes. After soy, Azuki is the second most consumed legume in Japan. Productive plant, easy to grow, to be sowed in spring.
