Lemon Balm (melissa officinalis): although not particularly rare, this plant is important in vegetable gardens. Aromatic and medicinal, it has a pleasant scent and a citrus flavor, its fresh leaves are consumed in mixed salads or herbal teas. Sow in spring, partial shade, it needs regular irrigation for the aerial part to to develop better.
